Ingredients:

  • blue grenadier super-fillet
  • ½ cup wheat flour + 2 tablespoons
  • ¼ teaspoon baking powder
  • 1 egg
  • milk (for proper dough consistency)
  • cooking oil
  • 4 large potatoes
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried sweet pepper
  • olive oil
  • salt and pepper
  • 2 raspberry tomatoes
  • 1 shallot
  • ½ yellow pepper
  • 2 sprigs of fresh coriander
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon olive oil
  • salt and pepper

Method

Mix flour, milk, an egg and baking powder, and form a thick, creamy dough. Flavor with a pinch of salt and pepper. Spice the fish, then coat with flour and cover with dough. Fry on hot oil until golden on both sides.

Cut the potatoes lengthwise into eighths, season with pepper, rosemary, salt and pepper. Sprinkle with olive oil, and roast approx. 20 minutes in 200oC. Thinly slice or mix all salsa vegetables. Season to taste.
